Hi,
Does anyone know if the candy recipes like fudge (ones that require caramelization) can be cut in half? I'm wondering if the proportions of sugar/water etc would have to change for it to turn out right.

Hi Freeda!
In my experience, scaling recipes up or down with caramelization is about the same with what I've experienced with baking. I've found that I can scale up or down by a factor of 4 without most recipes getting significantly affected. So you should be able to cut a caramelization recipe in half (scaling down a factor of 2) with normal results.
