I've just started baking banana nut bread for my vegan sweetheart. I found the recipe on your website. Compared to the kind I'd made before using eggs and shortening, it's terribly dry and without much flavor. Is there anything I can do to make it more moist and tasty?

Hmmm, I've been making this for years in my oven with no issues but ovens vary in heat just a little and bananas vary in moisture so bread with fruit can sometimes be a little finicky.
Adding 2 Tablespoons of soy milk to the batter will probably take care of your moisture problem. You may also try taking it out of the oven when the toothpick inserted into it is 'almost' clean, meaning there are still some crumbs sticking to it.
Also, do you have a second oven thermometer in your oven to get a 'second' opinion? I used to make this at my parent's house in their old oven and it never turned out. Then I put a second thermometer in there and noticed the temp was 50 degrees higher.
In terms of the flavor, you may want to increase the cinnamon and nutmeg by about 1/4 teaspoon to coax out more flavor. If it's still not flavorful enough for you, sub Earth Balance margarine for the canola oil and reduce your salt to compensate- probably by about 3/4 teaspoon.
