Hi Mattie, love the webpage. I'm intrigued by your vegan butter and want to try it. I've only been able to fine lecithin granules in the UK and you specify liquid lecithin in your recipe...any suggestions? By the way, your ultimate brownies are cooling on my countertop as I write...they look pretty ultimate. Also tried your vanilla ice cream which was great. My husband adored it...though I might have to add a little cashew cream to it...I'm a B & J's fan.

Hi Gilly! Yes, as you noticed in the Vegan Butter article I stated that you can use soy lecithin granules by substituting 2 1/4 teaspoons granules for 1 teaspoon liquid soy or sunflower lecithin.

Hope you enjoyed the brownies! I'm working on an update to the Vanilla Ice Cream that will make it more Ben and Jerry's like. I expect to have it updated within a week or so. Thanks for the input!

I tried using lecithin granules in the vegan butter. But they didn't dissolve. Do I need to dissolve them first in something else, like hot water? Thanks!:)
