OK...so maybe I got a little excited, but I offered to make my little cousin's wedding cake next spring. The good thing is she's veg, so that helps. Anyone have any cake tips or suggestions for me? I haven't baked a large vegan cake yet so I'm wondering if I need to be aware of any issues. I plan on starting to test cake flavors soon.

    Make a wedding cake.It's really good idea you can save some money and it's healthier.

    Wow, cool that you're stepping up to the plate (literally) and offering this. Is this going to be a traditional wedding cake? If so, buy a couple cake decorating books and take a cake decorating class or two if you feel you need it. I took a cake decorating class at Brooklyn kitchen a couple months ago and it was so great to have the hands-on.

    If it's not going to be a traditional wedding cake that frees you up for more experimentation. I went to a wedding recently that had cupcakes arranged in a pyramid and it was so easy and fun. Everyone just grabbed a cupcake and it was so easy although a little bit less grandiose.
