OK...so maybe I got a little excited, but I offered to make my little cousin's wedding cake next spring. The good thing is she's veg, so that helps. Anyone have any cake tips or suggestions for me? I haven't baked a large vegan cake yet so I'm wondering if I need to be aware of any issues. I plan on starting to test cake flavors soon.

MattieOfflineWow, cool that you're stepping up to the plate (literally) and offering this. Is this going to be a traditional wedding cake? If so, buy a couple cake decorating books and take a cake decorating class or two if you feel you need it. I took a cake decorating class at Brooklyn kitchen a couple months ago and it was so great to have the hands-on.
If it's not going to be a traditional wedding cake that frees you up for more experimentation. I went to a wedding recently that had cupcakes arranged in a pyramid and it was so easy and fun. Everyone just grabbed a cupcake and it was so easy although a little bit less grandiose.
