A new year of vegan baking is upon us. So what's it hold for the new year? I predict that higher-end eats will make a stronger showing, along with aliens finally sharing their vegan baking technology with us (It's about damn time). What do you think?

    I definitely think that veganism, along with vegetarianism and vegan specialities, and even raw foods are starting to become much more accepted and popular in mainstream culture- what with all of the health benefits of vegan diets being popularized lately. When I was in Babycakes yesterday, two women wandered in with a bunch of little girls, none of them were vegan, but they were AMAZED and thrilled at how delicious the desserts were. It seems like more and more places are offering everything from vegan to gluten-free options- in fact, I see more vegan friendly items than diabetic friendly items most of the time!
